Sustainability is at the core of our business.
We are incredibly proud to have been awarded 3 stars by the Sustainable Restaurant Association, the highest possible rating.
Ethical sourcing is paramount and we will only buy from suppliers that we trust. If we can’t source an ingredient responsibly, we will not buy it. There are always alternatives, and that is why our menus are written daily, after we know what produce is available.
And as we are really happy to talk about our ingredients, customers can be sure that the food we serve has been sourced as carefully as it would have been had they selected it themselves. All of our eggs and chickens are free range and from Sussex. The beef, lamb and pork that we buy is locally farmed to high standards of animal welfare and all of our seafood is from sustainable sources. Working closely with Head Chef Alistair Doyle, our fabulous butcher has created our very own pork, pear & thyme sausages which can only be found at the PPT!
But it’s not just about the food on your plate!
It’s also about how we engage with our community, the charities we support, the way we share our tips, how we dispose of our waste and what we use to wipe our tables down with.
From the recycled napkins that we buy to the waiter's order pads that we make, a lot of thought goes into the decisions that we make. And as we really don't like to throw things away, we make cork boards from, well, corks, garlands from bottle tops and have even been known to melt old candles down to form new ones...
Our ongoing sustainability and ways that we can continue to improve our impact on the environment is at the forefront of our minds.
